Ingredients
- 8 large eggs
- 1/2 cup low-fat cottage cheese
- 5 oz fresh baby spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup diced yellow onion
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp kosher salt
- 1/4 tsp dried oregano
Steps
- Preheat oven to 375 degrees F and lightly grease an 8x8 inch baking dish with olive oil.
- Heat olive oil in a skillet over medium heat, then saute onion for 3 minutes until softened and translucent.
- Add minced garlic and baby spinach, tossing until spinach is fully wilted, about 2 minutes, then remove from heat.
- Whisk eggs, cottage cheese, salt, pepper, and oregano in a large bowl until smooth and slightly frothy.
- Stir the wilted spinach mixture and half the feta into the eggs, then pour into the prepared baking dish.
- Sprinkle remaining feta on top and bake for 22 to 25 minutes until center is set and edges are golden.
- Cool 5 minutes, then slice into 4 equal squares and refrigerate in airtight containers up to 4 days.
