Ingredients
- 1.25 lb 93% lean ground turkey
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup low-sodium chicken broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1 tbsp olive oil
Steps
- Set Instant Pot to Sauté, add olive oil, and cook onion and bell pepper for 3 minutes until softened.
- Add ground turkey and garlic, breaking the meat apart with a spoon, and brown for about 5 minutes.
- Stir in chili powder, cumin, smoked paprika, and salt so the spices toast directly on the meat for 30 seconds.
- Add both beans, diced tomatoes, tomato sauce, and chicken broth, then scrape the bottom of the pot to release any stuck bits.
- Seal the lid, set valve to Sealing, and cook on Manual High Pressure for 15 minutes, then quick release.
- Stir well and let the chili rest uncovered for 5 minutes so it thickens to a spoonable consistency.
- Portion 1 heaping cup into 6 freezer-safe containers, cool fully, then freeze flat for up to 3 months.
- Reheat from frozen in the microwave with a splash of broth, covered, in 90-second bursts until steaming.
